Campari Mojito for One

INGREDIENTS

  • 1/4 ounce (about 4 large sprigs) fresh mint, plus additional for garnish
  • 1 ounce lime juice
  • 1 ounce white rum
  • 1 1/2 ounce Campari
  • Crushed ice
  • 2 lime wedges
  • 2 to 4 ounces good tonic water, such as Fevertree or Q Tonic

PREPARATION

  1. Place the mint sprigs in a large glass or cocktail shaker, and add the lime juice and rum. Muddle with a muddler or a wooden spoon for several minutes, crushing the mint and releasing its aroma. Add the Campari and a few cubes of ice, and shake or stir until well chilled.
  2. Fill a 12-ounce highball glass with crushed ice and squeeze a lime wedge over top. Pour in enough tonic water to fill the glass a quarter full, then pour in the strained Campari mixture. Garnish with a little more tonic water, the second lime wedge, and mint. Best with a straw!

friday at five :: cucumber-rosemary gin tonic

It’s Friday already? What a perfect way to end the week with a new spin on an old favorite — it not only looks beautiful, but tastes great!  

Cucumber-Rosemary Gin and Tonic

  • 1 cucumber
  • 1 lime
  • 3 sprigs rosemary
  • 2 oz. Hendrick’s Gin
  • 4 oz. tonic water (preferably Q or Fever-Tree)
  • ice

Peel one half of a cucumber, and slice a lime into eight wedges. In a highball glass, add three slices of peeled cucumber, 1 sprig rosemary, juice from a lime wedge and 1 ounce gin. Muddle with the back of a spoon.

Strain through a mesh strainer into a second highball glass. Add several cubes of ice, and three slices of unpeeled cucumber. Top with remaining gin and tonic, and serve garnished with rosemary sprigs.

Originally from Massachusetts, this is my old stand by …

INGREDIENTS

  • 1.5 oz Vodka
  • Cranberry juice
  • Lime wedge

Glass: Highball

PREPARATION

Add the vodka to a highball glass filled with ice. Top with cranberry juice and stir until chilled. Squeeze the lime wedge over the glass and drop it into the drink.

INGREDIENTS

  • 2 oz  Banks 5-Island Rum
  • .75 oz Fresh lime juice
  • 3 oz Pink grapefruit soda (Ting or Izze)

Garnish: Lime wheel or long lime twist

Glass: Highball

PREPARATION

  1. Add the rum and lime juice to a shaker and fill with ice.
  2. Shake, and strain into a highball glass filled with fresh ice.
  3. Top with the grapefruit soda and garnish with a lime wheel or long lime twist.
